Apart from water, the basic ingredients of beer are a fermentable starch source, such as malted barley and hops.

For centuries malt has been made from spring barley. Malted barley is different from forage barley, as long as it has a lower protein and higher starch content. The Brewery of Pécs uses special, Hungarian-grown malted barley, and buys 6,000 tons of this type a year.

If beer was brewed only from malted barley, we would get a sweetish, gummy and dense liquid. Because of this brewers of the last centuries carried out numerous experiments trying different herbs to make their beers more tasteful, cleaner and lasting longer. They finally had found the hop plant, which fully met all the demands.

As a result, the flower of the hop vine became the herb of beer.

As of today, we know that the alpha amylase of hops provides for the typical bitter flavour, enhances strength, has a soothing, and even an appetising effect. We differentiate between bitter and savoury hops. The rate and quantity of these two determine the peculiar character, taste, flavour and bitterness of Szalon beer.

The Brewery of Pécs only uses first class hops for all of its beers. To secure the same quality throughout the year only ready-made (processed) barley can be used, taking into account that even dried barley cannot keep its decisive characteristics for a long time.

One thing is for sure: the higher the content of malted barley and hops, the better the quality of the beer!
